KAI SHUN DAMASCUS DM-0702. Hollow Santoku Knife: Santoku means "three virtues", the three main tasks this kitchen knife excels at: slicing, dicing, and chopping. The alveoli prevent the slices from sticking to the leaf.
The Shun Damascus series of kitchen knives is one of the best Damascus steel series and one of the most appreciated by professional and amateur chefs. These kitchen knives are made from 32-layer stainless Damascus steel. The central layer is made of VG MAX steel, resistant to corrosion and extremely hard (61±1 HRC, 1% carbon and 1.5% cobalt). The manual sharpening and convex cutting of the blade of each Kai Shun knife offers a perfect sharpness allowing it to cut through even the hardest and most resistant material. This sharpness and the well-balanced weight of the blade allow for effortless cutting.
